Add all the ingredients to a food processor and mix until it forms a dough like mix.
Take spoons of the mix and roll into a ball between your palms then roll in the extra shredded coconut. They will firm up after being in the fridge for a while, ending up with a soft, fudge like texture.
Store in a single layer in a large, shallow, rectangular container. They keep in the fridge for 3 - 5 days and can also be frozen.
