The dates provide some sweetness, but if the cookies are not sweet enough for you, add a stevia based sweetener or erythritol.

 

First, soak the dates in water for 30 minutes. Preheat the oven to 180 degrees. Line a baking tray with baking paper

 

Making the Cookies

Make the almond meal by blending 1 cup of almonds. This will give about 1 1/3 cups of almond meal. Alternatively use store bought almond meal. 

Combine the baking soda, almond meal and shredded coconut in a large bowl. Drain the dates and discard the soaking water. Chop them finely and stir through the dry ingredients. Next mix through the beaten egg and coconut oil (you may need to soften the coconut oil first if it is cold weather).

Divide the mixture into 12 balls, arrange on a baking tray and flatten. Next place in the preheated oven and bake until golden. About 10 minutes for a softer cookie, 20minutes for a more toasted one.

 

Storing the Cookies

Cool on a rack and then transfer to a sealed container. Will keep fresh for a few days.
