for Vegetarian - use tempeh instead of bacon          

 

  • Preheat the oven to 190 degrees c. Grease two ramekin dishes.
  • Heat the butter or olive oil then add the shallots and bacon and fry for a few minutes.
  • Steam broccoli florets.
  • Whisk the eggs then stir in the bacon and shallots. Season with salt (and pepper if desired)
  • Divide mixture between the two greased ramekins.
  • Press broccoli florets into the top.
  • Sprinkle with your favourite cheese (e.g. parmesan, mozzarella)
  • Baked in the oven for 15 - 20 minutes or until eggs are set and turning golden on the top.
