Simple ingredients, but set in the right mould becomes a healthy, refreshing treat.

  • Combine the coconut cream, vanilla, erythritol (or stevia) and zest and blend or process and process until smooth. 
  • Freeze the mixture for 30 minutes or so
  • Process or blend the coconut cream mixture with the berries (just enough to combine)
  • Pour into moulds and freeze. Don't forget to insert paddle pop sticks if using ice-cream moulds.
  • You can also use small ramekins dishes as a mould. Stand at room temperature until it softens a little, garnish with a little grated chocolate and fresh peppermint sprigs for a fancier dessert.
