Want to make your own ice cream, but don't have an ice cream maker? No problem. With some ice-cube trays and a food processor, you can whip up a delicious summer dessert from scratch. We've used 1/2 stevia and 1/2 sugar, but you could use all stevia if preferred.

The serving size might seem tiny at first, but the idea here is quality over quantity. You'll be surprised how satisfying it is, being made with rich ingredients and the unique flavour of green tea.


 
Serves - 8 (about 8 standard 50g scoops)
per Serve - main ingredients:     160 cal   /   670 kJ 
* this recipe uses a 40% fat cream

 

Preparing the Mixture
  • Add the milk to a saucepan and bring to a simmer. Add the stevia powder (equivalent to 2 tablespoons of sugar) and sugar and stir until dissovled and remove from the heat.
  • Next whisk the egg yolks in a bowl, then slowly pour about 1/4 of the milk and stevia mixture to the egg yolks while whisking. 
  • Return the remaining milk and stevia mixture back to the stove on low heat and add the egg yolk mixture. Stir continuously until the mixture thickens a little. This is bascially like making custard.
  • Now pour the custard like mixture back into the bowl.
  • In a separate bowl mix the matcha (green tea) powder with 30ml of water (this is 1.5 tablespoons) to form a paste.
     

Add 1/3 of the cream and mix with the green tea paste till smooth. Then add the rest of the cream, the vanilla essence and the milk/yolk mixutre.

 

Making the Ice Cream

 

 

 

 

 

 


If you have an ice cream maker follow the instructions to make ice cream from the above mixture. Otherwise pour the mixture into ice-cube trays and freeze.
 


When frozen remove and blend the ice cream cubes in a food processor. Avoid over blending or it will melt. If you have a champion juicer this churns the ice-cream cubes really well.

 


Transfer to a contain to store in the freezer.

 

To Serve

Putting your container of frozen ice cream in the fridge for 15 minutes or so before serving will make it easier to scoop.
 

 

Variations

The variety of flavours are endless. Here are some ideas to get you started:

Berry & Vanilla - leave out the green-tea powder and stir through berries after blending.

Dark Chocolate - replace the green-tea powder with 1 tablespoon (or more) of cacao powder.

Maple & Almond - replace the green-tea powder with 1 tablespoon of maple syrup and stir through chopped toasted almonds after blending.
