  • Whisk the eggs and add the chives.
  • Toast the keto bread (or 1/2 Paleo Roll each if you're from the Sunshine Coast).
  • Gently heat the olive oil or butter in a pan then add the egg mixture.
  • As the egg starts to set fold it over to allow the uncooked mix to set. 
  • Continue to fold over and when all the egg mix has just set take off the heat.
  • Spread the avocado on the toast, top with scrambled eggs, season with salt and pepper.
  • Top with smoked salmon slices and garnish with fresh herbs.
