for Dairy Free - replace cheese with avocado and use olive oil instead of butter


 

  • Beat eggs, water, salt and pepper.
  • Heat butter in a 20cm nonstick pan or skillet until hot.
  • Tilt pan to coat bottom. 
  • Pour in egg mixture - mixture should set immediately at edges.
  • Gently push cooked portions from edges toward the centre with spatula allowing uncooked eggs to touch the hot pan surface. 
  • Continue cooking, gently moving cooked portions as needed.
  • When no visible liquid egg remains, place the cheese and spinach on half the omelet. Fold omelet in half, divide in two, then slide onto serving plates.
  • Serve wish a side of sauteed mushrooms or a light salad of tomato, cucumber, parsley and lemon juice
  • Prep time - 20mins
  • Cooking time - 10mins
