per Serve - main ingredients only:     400 cal   /   1660 kJ 
for Gluten Free - this recipe doesn't contain any wheat, but for strict gluten free check that the curry paste, coconut cream and fish sauce are all gluten free

 
  • To a wok or thick based fry pan add 1/2 cup of coconut cream.
  • Bring to the boil, add the curry paste and simmer around 10 minutes until fragrant.
  • Add the sugar, fish sauce and kaffir lime leaves to the pan.
  • Add the chicken strips, eggplant, bamboo shoots and the rest of the coconut cream (and water to desired thickness), then bring back to a simmer.
  • Cover and continue to simmer for 15 minutes or until chicken is cooked.
  • Divide between four bowls and garnish with Thai basil leaves and chilli if desired.
  • Serve on it's own, with rice, or with cauliflower rice for a low carb meal.
