for Ketogenic - use cauliflower instead of potato and choose a low carb bread                                           


This soup is easy to make. Adjust the amount of water added for a thick or thinner soup.
For high carb use potatoes (or sweet potato). For low carb use cauliflower.
 

  • Add the potato or cauliflower and water the saucepan.
  • Add other vegetables of your choice on top.
  • Add the cummin and paprika and pinch of salt (optional).
  • Cover and simmer until vegetables are soft.
  • Blend with a stick blender in the sauscepan.
  • Pour into serving bowls. Garnish with cracked pepper and fresh herbs if desired
